The awesomely scenic and wildly remote Great Southern wine region produces Sauvignon Blanc with exotic fruit notes, great varietal purity and refined acidity. Grapes are selected from our vineyards located in the sub-region of Mount Barker where the coolness and continentality of the climate provide an intriguing spectrum of Sauvignon Blanc varietal characters.
The 2011 season:
A warm and dry spring followed by a summer punctuated with perfectly timed rain events, was otherwise low in humidity. The autumn harvest period was dry and protracted with vintage conditions best described as on the warm side of perfect. The resulting white wines show an abundant and bold array of varietal expressions which are layered and pure.
Tasting Notes:
A limpid lemon yellow in colour with enticing aromas of guava, gooseberry, figs and sweet melons. Exotic tropical fruits with hints of sweet herbs and poached citrus fill this plenteous basket on the palate. The acidity of the wine is both mineral fine and citrus pithy, which adds texture, length and balance to this enchanting wine.
Winemaking:
Each vineyard site is vinified separately at low temperatures in either stainless steel tanks or old oak barrels. The delicate free run juice is separated from the pressings in order to maintain the vibrancy of the fruit and structural elegance of the wine.
Prior to bottling, the wine is blended, fined and filtered. Bottling occurs in June of the vintage year, in time for a spring release.
