HARVEST:2009 was a warm growing season resulting in an earlier than usual harvest in the Margaret River region. Consequently the grapes were able to obtain their optimum sugar and flavour ripeness without disease or rain pressure. The Cabernet Sauvignon grapes had excellent berry flavours and good acidity.
WINEMAKING:The Cabernet Sauvignon grapes were harvested in the cool of the morning to ensure the fruit was in the best condition. The must was chilled for several days to extract colour and flavours from the skin and then fermented in stainless steel tanks with a style specific yeast strain.
COLOUR:Vibrant raspberry red with pink hues.
NOSE:
Lifted aromas of cherry, strawberries and rosewater with notes of fresh spearmint.
PALATE:The palate is full of red berry fruits and generous concentrated flavours. Ultimately dry, the wine is well balanced with a long, lingering finish.
CELLARING:Drink now.
